Food grade HPMC Hydroxypropyl Methylcellulose , also abbreviated as hypromellose , is a kind of non-ionic cellulose ether. It is a semi-synthetic, inactive, viscoelastic polymer, often used in ophthalmology as a lubrication department, or as an ingredient or excipient in food additives, and is commonly found in various types of commodities. As a food additive, hypromellose HPMC can play the following roles: emulsifier, thickener, suspending agent and substitute for animal gelatin. Its “Codex Alimentarius” code (E code) is E464.

Properties

Hydroxypropyl Methylcellulose(HPMC) has a unique combination of versatility, mainly reflect the following superior performance:

Anti-enzyme properties: anti-enzyme performance is better than starch, with excellent long-term performance;

Adhesion properties:

under the conditions effective dosage, it can achieve the perfect adhesion strength, meanwhile providing moisture and releasing flavor;

Cold water solubility:

The lower the temperature is ,the more easily and rapidly the hydration is;

Delay hydration properties:

It can reduce food pumping viscosity in thermal process , thereby  can significantly improve the production efficiency;

Emulsifying properties:

It can reduce the interfacial tension and decrease the accumulation of oil droplets to get better emulsion stability;

Reduce oil consumption:

 It can enhance the lost taste, appearance, texture, moisture and air  characteristics due to reduce oil consumption ;

Film Properties:

The film formed by Hydroxypropyl Methylcellulose(HPMC) or the film formed by containing Hydroxypropyl Methylcellulose(HPMC) can effectively prevent oil bleeding and moisture loss,thus it can ensure foods stability of various texture;

Processing advantages:

 It can reduce pan heating and material accumulation of equipment bottom, accelerate the production process period , improve thermal efficiency and reduce deposit formation and accumulation;

Thickening properties:

Because Hydroxypropyl Methylcellulose(HPMC)can be used in conjunction with starch to achieve a synergistic effect,  it can also provide a higher viscosity than the single use of starch even at low dosage;

Reduce processing viscosity:

low viscosity of Hydroxypropyl Methylcellulose(HPMC) can increase thickening significantly to provide an ideal property and there is no need in a hot or cold process .

Water loss control:

It can effectively control the food moisture from the freezer to room temperature change , and reduce the damage ,ice crystals and texture deterioration caused by frozen .

 

Applications in food industry

1. Canned citrus: prevent whitening and deterioration due to decomposition of citrus glycosides during storage, and achieve the effect of preservation.

2. Cold-eaten fruit products: add in sherbet, ice, etc. to make the taste better.

3. Sauce: Used as an emulsification stabilizer or thickener for sauces and ketchup.

4. Cold water coating and glazing: used for storage of frozen fish, which can prevent discoloration and quality degradation. After coating and glazing with methyl cellulose or hydroxypropyl methyl cellulose aqueous solution, freeze it on ice.

 

Packaging

The standard packing is 25kg/drum 

20’FCL: 9 ton with palletized;10 ton unpalletized.

40’FCL: 18 ton with palletized;20 ton unpalletized.

 

Storage:

Store it in a cool, dry place below 30°C and protected against humidity and pressing, since the goods is thermoplastic, storage time should not exceed 36 months.
